Sous/ Duty Chef
Responsible for the preparation, production and quality of all Food Services. Daily management of shift staff and overseeing/preparation of all meals/food according to company levels of standards and quality whilst ensuring minimal wastage, effective portion control and profitability of dishes prepared.
Summary of essential job functions:
- Supervises and coordinates activities of Cooks and other workers engaged in preparing and cooking foodstuffs.
- Observes workers engaged in preparing, portioning, and garnishing foods to ensure that methods of cooking and garnishing and sizes of portions are as prescribed.
- Gives instructions to cooking personnel in fine points of cooking.
- Cooks and carves meats, and prepares dishes for A la Carte and for banquets and other social functions.
- Supervises cleanliness of kitchen and all areas related to food preparation, storage and disposal.
- Manages stock levels, receiving of stock and issuing of stock
- Secures the kitchen when closing by checking for safety and cleanliness and that all equipment is turned-off and all areas are clean.
- Carries out any additional requirements as requested by management from time to time.
- Assumes responsibility for kitchen in absence of Head Chef
Requirements:
- Minimum 3 years cooking experience with a minimum of 1 years’ experience in chef/sous chef position
- Confident in A la Carte and Banqueting.
- Be a Namibian Citizen, or in position of valid Namibian Residency.
Abilities required:
- Ability to read and write in English
- Good communication skills
- Able to motivate staff
- Passion for cooking
- Ability to interact with clients
- Good planning skills
- Able to control stock and storerooms
- Able to interact in a mature manner with management, clients and staff
- Able to control stock and storerooms
- Must be knowledgeable about recipe’s and culinary dishes
- Demonstrate flexibility when dealing with requests from clients
- Must also be reliable to carry out orders handed down to them by Superiors
